CHARACTERISTICS

It is a red wine from native grape, "Nero di Troia". It is 60 years old vine, with high density (7000 plants for hectare), gouyot, not watered, conducted with integrated farming techniques, organic fertilizers without the use of herbicides. Grape harvest is made manually in the second half of October, for a total of 60 quintals per hectare. Fermentation is temperature - controlled with use of indigenous yeasts for about 10 days. The wine is refined in steel for 12 months, then for 8 months in oak barrels from Slavonia, at least 12 months in bottle.
